Background:

We sell our natural Heritage Berkshire and Berkshire cross pork and Angus cross beef as freezer packs.

The meat is sold by the half (1/2) or split side (1/4 which contains a mix of cuts from the front and hind quarter) or as a smaller sample pack (1/8 which is half of a split side).  The meat is cut, wrapped and frozen at the time you receive it.

PORK:

Weights will vary with the individual animal but a side (1/2) will be between 80-100 pounds. A split side ~40-50lbs; an eighth ~20-25lbs.

A split side will include packages of loin and butt chops - two per package, approximately 1-pound packages of bacon and sausage as well as fresh hams and roasts about 3-4 lbs each.   There will also be a small package of ribs. A quarter may include a hock as well.

BEEF:

Weights will vary with the individual animal. A half will be ~ 260-300lbs; a split side will be ~ 130-150 pounds; an eighth would be ~ 65-75lbs.

A typical order includes:        1 lb packages of hamburger
                                            3/4" steaks usually 2 per pkg 
                                            3-4 lb roasts
                                            braising ribs

A note about weight:  The weight is based on the hanging or dressed weight provided to us by the butcher.  The cut or final weight of the product you receive will be less due to moisture loss as well as the removal and trimming of bones and fat to produce the cuts you are familiar with.  This is standard procedure, for farms that sell meat by the whole, side or quarter.  That is why you will pay more when you purchase individual cuts.

Our prices will include the freezing, cutting and wrapping charges.  We charge a per pound price with no extra charges.
